Nutritional Value
- Chayote squash is high in many nutrients — especially folate (vitamin B9) — while low in calories, carbs, and fat and multiple antioxidants including Vitamin C and myricetin.
- The fiber content in chayote improve blood flow while lowering blood pressure and cholesterol.
- Chayote is an excellent source of folate, a nutrient required for proper fetal development especially for pregnant women.
- It has anticancer benefits and the vitamin C content also slow visible signs of aging.
Storage and Uses
- Chayote will keep in the refrigerator in a plastic bag for four weeks or so. Lightly wrap it in a paper towel before placing it in the plastic bag.
- Chayote fruit are eaten raw in salads and salsas, but are more often cooked by sauteing or baking or stuffed or boiling, mashed, scalloped, fried or pickled or used as curries as well.
Note
- Tuberous roots, fruit, young leaves,shoots and stems are also edible.
- Teas are prepared from the leaves.
